Tamagoyaki: The Japanese Rolled Omelet and the Pan Made for It

How the layers are made

The eggs are mixed gently without creating too much foam.

A small amount is poured into a heated, lightly oiled pan. As the egg begins to set, it is rolled toward one side.

Another thin layer is added beneath it, then rolled again.

This is repeated several times until the omelet becomes a soft, compact block made from many delicate layers.

The process is simple, but it requires steady heat and quick movement.

Why is the pan rectangular?

A round frying pan can be used, but its curved edges leave uneven sections that are harder to roll neatly.

A rectangular pan creates layers of equal width. Its straight sides guide the egg as it is folded and help form the familiar shape seen in Japanese breakfasts and bento boxes.
